Sugar

Sugar is a sweetener of natural origin, solid, crystallized, consisting essentially of loose crystals of sucrose, obtained from sugar cane (saccharum officinarum L) or sugar beet (beta vulgaris L) by appropriate industrial processes. A grain of sugar is between 30 and 70% smaller than a grain of rice.

White sugar undergoes a chemical purification process – called sulfitation – by passing through the cane juice the SO2 gas obtained by burning sulfur.
